Buckwheat is a hearty, gluten free whole grain. Don’t be deceived by the word “wheat” in the name; buckwheat is not a type of wheat, but a completely different grain. This is one of my favorite breakfasts when I know I have a long morning ahead and need fuel. This recipe can be modified to include any fruit, nut or seed butter, or sweetener. These can also be made in batches and stored in the refrigerator or freezer to reheat or toast for a quick breakfast or snack throughout the week.
