Cherry Almond Snack Bars
Satisfying snack that can be modified to suit multiple dietary and food allergy needs.

Ingredients
  • 1cup dried cherriespacked. May substitute any dried fruit
  • 1/3cup brown rice syrupmay substitute maple syrup, honey, corn syrup, simple syrup, or agave nectar
  • 1/3cup almond buttermay substitute peanut butter, cashew butter, or sunflower seed butter
  • 1cup almondswhole or chopped. May substitute walnuts, cashews, pecans, peanuts, pistachios, or sunflower seeds
  • 1 1/2cups rolled oatsmay substitute crispy brown rice cereal, puffed kamut, puffed millet, or organic corn flakes
Instructions
  1. Soak dried cherries in water for 10 minutes, drain.
  2. Process cherries in a food processor until small bits remain (about 1 minute).
  3. Place rolled oats, almonds, and dried cherries in a large mixing bowl – set aside.
  4. Warm brown rice syrup and amond butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dried cherries to disperse throughout.
  5. Once thoroughly mixed, transfer to an 8×8-inch baking dish or loaf pan lined with plastic wrap or parchment paper so they lift out easily.
  6. Place another piece of plastic wrap or parchment paper over the mixture, then press down firmly until uniformly flattened – use something flat, like a drinking glass, to press down and really pack the bars, which helps them hold together better. Leave covered.
  7. Place in fridge or freezer for 15-20 minutes until firm enough to cut.
  8. Remove bars from pan and chop into 9 even bars or squares. Store in an airtight container for up to a few days.
